Classic Vegan Grilled Chicken Caesar Salad
Vegan Classic Grilled Chicken Caesar Salad
Ingredients:
-2 cups Romaine Lettuce, chopped in 1” pieces
-1 Grilled Vegan Chicken Breast, sliced (recipe below)
-2-3 tablespoons Caesar Dressing (recipe below)
-1/4 cup Vegan Parmasean Cheese, shredded
Directions:

Place the lettuce into a large bowl. Add two tablespoons of the dressing to the bowl and mix well

Add the vegan parmesan and combine well
-
Transfer the salad to a serving bowl and top with the vegan chicken slices
Vegan Caesar Dressing
Ingredients:
-1/2 cup Vegan Mayo
-1/4 cup Extra Virgin Olive Oil, plus addition depending on your preferred dressing consistency
-1 teaspoon Dijon Mustard
-1 tablespoon Garlic, minced
-The Juice of Half a Lemon
-1/4 cup + 2 tablespoons Vegan Parmesan, shredded
-1/2 Sheet Nori, torn into small pieces (optional)
-Pepper to taste
Directions:

Place all of the ingredients into a blender
-
Blend until all of the ingredients are combined well and the dressing is smooth
-
Add additional olive oil to adjust the consistency of the dressing if needed
Vegan Grilled Chicken
Ingredients:
-1 10 ounce piece of Vegan Chicken (I used the Gardein “Lightly Seasoned Chick’n Scallopini)
-2 teaspoons Extra Virgin Olive Oil
-4 drops Liquid Smoke
The Following Seasonings to Taste:
-Salt-Free Garlic and Herb Seasoning
-Garlic Powder
-Black Pepper
-Dried Parsley
-Dried Thyme
-Trader Joe’s Onion Salt
Directions:

Preheat your oven to 400º F
-
Place the vegan chicken on an oven safe baking sheet
-
Add one teaspoon of the olive oil and two drops of the liquid smoke followed by all of the seasonings. Rub the seasonings into the chicken
-
Turn the chicken over and do the same to the other side
-
Bake the chicken piece for 20 minutes, turning the chicken half way through, or until the chicken is nicely browned
