Vegan Seafood Gumbo

 

Ingredients:

 

-2 Vegan Chicken Breasts

-3/4 cup Vegan Shrimp

-1/2 cup Vegan Crab

-2 Vegan Sausages, sliced 

-1/2 cup White Onion, diced

-1/2 cup Celery, diced

-1/2 cup Green Bell Pepper, diced

-1 cup Okra, sliced

-2 tablespoons Garlic, minced

-1/2 cup All-Purpose Flour

-6 cups Vegan Chicken Broth

-1/4 cup Oil of Choice

-1 teaspoon Liquid Smoke

-1-2 teaspoons Tabasco Sauce

-3-4 Bay Leaves

The Following Seasonings to Taste:

-Old Bay Seasoning

-Black Pepper

-Garlic Powder

-Onion Powder

-Dried Thyme

-Non-stick cooking spray

-Olive Oil to sauté

 

Directions:

 

  1. Preheat the oven to 400ºF. Place the vegan chicken, shrimp, and crab on a foil-lined baking sheet. Spray liberally with the non-stick spray. Season liberally with the Old Bay, black pepper, garlic powder, onion powder, and thyme. Bake the chicken, shrimp, and crab for 15-20 minutes or until they have browned. Set aside

  2. In a large pot, heat the olive oil on medium-high heat. Add the sausages and sauté until browned. Remove and set aside

  3. Prepare the roux: add the additional oil and heat. After the oil is hot, gradually add the flour to the pot. Beginning to whisk immediately to stop the flour from clumping. Continue to whisk until the roux becomes a rich, caramel color

  4. Add the celery, onion, and bell pepper to the roux. Sauté until fragrant 

  5. Add the chicken stock, garlic, liquid smoke, tabasco, dried thyme and bay leaves. Season to taste. Simmer on low for 30-45 until the flavors develop and the broth slightly thickens

  6. Add the okra, sausage, chicken, crab, and shrimp to the pot. Simmer for an additional 20 minutes

  7. Serve with rice.
