Vegan Bahn Mi

 

Ingredients:

 

-Sweet Chili-Glazed Tofu (recipe below)

-Spicy Mayo (recipe below)

-English Cucumbers, sliced (horizontally)

-Carrots, sliced (horizontally)

-Radishes, sliced

-Red Onion, sliced

-Jalapeños, sliced

-Cilantro

-French Baguette (about 6 inches, or whatever your desired length)

 

Directions:

 

  1. Toast the French baguette at 350º for 3-5 minutes until bread is brown and crispy 

  2. Spread the spicy mayo on the bread. Layer the ingredients in the following order: cilantro, cucumbers, carrots, tofu, radishes, onions, and jalapeños 

 

 

Sweet Chili-Glazed Tofu

 

Ingredients:

 

-1 16 oz. package of Firm Tofu

-1/4 cup Soy Sauce

-1/2 cup Sweet Chili Sauce

The Following Seasonings to Taste (or seasonings of choice):

-Pepper

-Garlic Powder

-Smoked Paprika

-Dried Thyme

-Ground Oregano

-Sesame Oil for frying

 

Directions:

 

  1. Drain and pat the tofu too dry. Slice the tofu on the short side into 1/4 inch slices. Season liberally with the seasonings above

  2. Heat a large skillet on medium-high heat. Coat the bottom of the pan with sesame oil

  3. Carefully add the tofu to the skillet. Cook the tofu for about 7-10 minutes of each side or until the tofu gets brown and crispy. You may have turn the tofu intermittently to avoid burning

  4. Deglaze the pan by adding the soy sauce. When the soy sauce thickens, add the sweet chili sauce. Cook the tofu for an additional 2 minutes or until the sweet chili sauce thickens

 

 

Spicy Mayo

 

Ingredients:

 

-3 tablespoons Vegan Mayo

-1 tablespoon Sriracha

 

Directions:

 

  1. Place the ingredients in a small bowl. Stir to combine
