Vegan Chicken Jibarito
Ingredients:
-1 Green Plantain
-1 Vegan Chipotle Chicken Breast (recipe below)
-2 tablespoons Spicy Garlic Mayonnaise (recipe below)
The Following Toppings:
-Cilantro
-Sliced Tomatoes
-Red Onion
Oil for Frying
Directions:

Heat the oil. Peel the plantain. Cut it once in the middle. Then, slice each half lengthwise down the middle

Fry the plantain quarters for about three minutes. Remove and drain

Place the plantain quarters flat side down. Using a smaller cutting board, smash the plantain quarters flat. Return the flattened plantain quarters back to the oil and fry until golden brown

Spread a thin layer of the spicy garlic mayonnaise on each of the plantain pieces. Top with the cilantro, chipotle chicken, onion, and tomato.
Chipotle Chicken Breasts
Ingredients:
-2 Vegan Chicken Breasts
-1/4 cup canned Chipotles
-1 tablespoon Lemon Juice
-1 tablespoon Olive Oil
The Following Seasonings to Taste:
-Old Bay Seasoning
-Black Pepper
-Smoked Paprika
-Garlic Powder
-Onion Powder
-Dried Parsley
-Dried Thyme
Directions:

Preheat the oven to 400ºF. Drizzle the olive oil and the lemon juice over the vegan chicken. Season to taste with the seasonings

Dice or rip the chipotles into small pieces and place on top of the vegan chicken. Using your hands, spread the seasonings evenly over the vegan chicken

Cover with foil and bake the chicken for 15 minutes. Remove the foil and continue to bake for an additional 10 minutes.
Spicy Garlic Mayonnaise
Ingredients:
-1/4 cup Vegan Mayonnaise
-1 tablespoon Garlic, minced
-1 tablespoon Sriracha
-1 teaspoon Cumin
The Following Seasonings to Taste:
-Black Pepper
-Seasoning Salt
-Dried Parsley
Directions:

Place all of the ingredients in a small bowl. Mix well to combine.
