Vegan Meatball Sub

 

Ingredients:

 

-1 6 inch baguette 

-4 Vegan Meatballs, frozen (I used Earth Grown’s Classic Meatless Meatballs)

-3/4 cup Marinara Sauce

-2 tablespoons Nutritional Yeast

-2-3 tablespoons Vegan Parmesan Cheese

-2-3 tablespoons Vegan Mozzarella Cheese

-1 teaspoon Garlic, minced

-1/4 medium Red Onion, thinly sliced

1/4 medium Green Pepper, thinly sliced

The Following Seasonings to Taste:

-Black Pepper

-Onion Salt

Oil Spray for sautéing peppers and Onions

 

  1. Preheat oven to 350º F

  2. In a small pan, sauté the peppers and onions until soft. About two minutes from turning off the heat, add minced garlic

  3. In a microwave safe bowl, add meatballs and most of the marinara sauce. Mix to combine and microwave for two minutes

  4. Remove the meatballs from the microwave and add the vegan parmesan and remaining sauce. Mix well to combine. Microwave for an additional two minutes or until cheese is melted

  5. Build the sub: take the baguette and cut it lengthwise but do not cut it all the way through. Place the sautéed onions and peppers on the bread followed by the meatballs. Finally, top the sub with the vegan mozzarella

  6. Bake the sub until bread is toasted and cheese is melted
