Vegan Tuna Salad

(Vegan Chickpea Salad)

Vegan “Tuna Salad” (Vegan Chickpea Salad)

 

Ingredients:

 

-1 15.5 oz can Garbanzo Beans

-1/2 cup vegan mayonnaise

-1 sheet of nori, finely teared/shredded

-1/4 cup red onion, diced

-1 tablespoon minced garlic

-2 tablespoons Nutritional Yeast

 

Optional:

-3 tablespoons Trader Joe’s “Hot and Sweet” Jalapeños, diced

-Trader Joe’s “Nori Komi Furikake Japanese Multi-Purpose Seasoning”

 

Each of the following to taste (I used about a teaspoon):

 

-Black Pepper

-Salt

-Trader Joe’s Onion Salt

-Garlic Powder

 

Directions:

 

  1. Drain and discard liquid from the can of garbanzo beans and empty beans into a medium bowl

  2. Using a potato masher or two forks, mash garbanzo beans into pea-sized pieces 

  3. Add remaining ingredients and seasonings to the garbanzo beans and mix well

  4. Serve with crackers, in salad, or on bread
