Vegan Jamaican-Style Brown Stew Chicken

Vegan Brown Stew Chicken

 

Ingredients:

 

-7 oz. Vegan Chicken (I used the Verisoy Smoked Chicken Drumsticks)

-1/2 Large Onion, Sliced

-1/2 Green Pepper, sliced

-4 cloves of Garlic, halved

-4 springs Fresh Thyme, halved

-1 tablespoon Jamaican Browning

-1 tablespoon Olive Oil

-2 tablespoons Ketchup

-1 tablespoon Better Than Bouillon No Chicken Base

-4 cups Water

-2 tablespoons of Canola Oil for frying

The Following Seasonings To Taste (about a tablespoon each):

-Jamaican All-Purpose Seasoning (or you can use Seasoning Salt)

-Black Pepper

-Salt-Free Garlic and Herb Seasoning

-Garlic Powder

-Paprika

 

Directions:

 

  1. In a medium mixing bowl, place the vegan chicken, onion, garlic, green pepper, thyme, olive oil, browning, and seasonings. Use clean hands and mix well to combine. Marinate for at least 4 hours but overnight is better

  2. Heat the canola oil in a deep, medium pan on medium-high heat. Remove the chicken from the bowl, being sure not to bring any of the other vegetables into the pan. Brown the chicken in the oil and then set the chicken aside

  3. In the same pan, add the vegetables from the bowl. Take the water and pour it into the bowl that the chicken was in. Mix the water around being sure to get all of the remaining seasonings out of the bowl. Pour this water into the pan with the vegetables. Then, add the ketchup and Better Than Bouillon and stir well

  4. Turn the heat down to low and simmer for 30 minutes or until the liquid reduces by half. Add the chicken back into the pan and simmer for an additional 10-15 minutes
