Vegan Beef Flautas
Vegan Steak Flautas
Ingredients:
-8-10 Corn Tortillas
-1 cup Vegan Beef, diced
-1/2 cup Tomato Sauce
-1/2 cup Water
-1 tablespoon Better Than Bullion No Beef Base
-Vegan Refried Bean (recipe below)
-1 tablespoon Garlic, minced
-1 tablespoon Olive Oil
-Oil for frying
The Following Seasonings to Taste:
-Black Pepper
-Onion Powder
Directions:

Heat the olive oil in a large skillet. Add the vegan beef and the Better Than Bouillon. Sauté the vegan beef until browned and slightly crispy. Season the vegan beef with black pepper and onion powder

Add the tomato sauce, garlic, and water to the skillet. Sauté for 5-7 minutes. Add additional water if the vegan beef becomes too pasty

Place the corn tortillas between damp paper towels and heat in the microwave for about 1 minute

Taking one tortilla at a time, spread a thin layer of the beans in the center of the tortilla, leaving about 1 inch around the perimeter. Spoon about a tablespoon of the vegan beef on top of the beans and roll the tortilla closed

Heat about 1/2 inch of oil in a large skillet. Place the flautas seam side down and fry for about 3 minutes on each side or until golden brown.
Refried Beans
Ingredients:
-1 15.5 oz can pinto beans
-1 tablespoon of oil (I used canola)
The following seasonings to taste:
-Black Pepper
-Garlic Powder
Optional
-1 teaspoon “Better Than Bouillon” Vegetarian No Chicken Base
Directions:

Heat oil in a small saucepan

Add the entire can (including juices) of pinto beans to the oil. Heat beans until they start to simmer
-
Using a potato masher or two forks, mash the beans until smooth (you will still have pieces of the bean “skins” remaining)

Add seasonings and the Better Than Bouillon to beans and stir to incorporate
