Cheesecake Factory Vegan Avocado Egg Rolls

Vegan Cheesecake Factory Avocado Egg Rolls 

 

Ingredients

 

-1 medium Hass Avocado, diced

-1/4 cup Sundried Tomatoes, diced

-2 tablespoons Cilantro, minced

-2 tablespoons Red onion, minced

-1 tablespoon Green Onion, sliced

-1 tablespoon Minced Garlic

-1 tablespoon Garlic Brine (optional)

-Salt and Pepper, to taste

-4 Vegan Egg Roll Wrappers

 

Directions

 

  1. Prepare the filling: Combine all the ingredients except the wrappers in a small bowl. Fold gently until combined

  2. Take one wrapper and place it on a flat surface. Using the tip of your finger, use water and wet the perimeter of the wrapper. Place about three tablespoons of the filling in the center, diagonally 

  3. Take the corner closest to you and fold it over the filling. Take the two side corners and fold them in towards the center. Continue rolling over the filling until closed

  4. Bake or air fry at 400ºF until golden brown
