Vegan Chicago-Style Pizza Puff
Ingredients:
-4 oz. Vegan Sausage (I used The Beyond Meat Hot Italian Sausages)
-1/2 cup Marinara Sauce
-1/4 cup Onion, diced
-1/4 cup Mushrooms, diced
-2 tablespoons Garlic, minced
-1/2 cup Vegan Mozzarella
-1 tablespoon Dried Thyme
-1 tablespoon Fennel Seeds
-Oil for frying
-2 4 inch balls (about 1/2 cup worth) Pizza Dough
Salt and Pepper to taste
Directions:

Prepare the filling: in a medium sauce pan, heat about a tablespoon of oil. Add the mushrooms and onions and sauté until the onions are translucent

Add the sausage and cook until the sausage is browned

Add the thyme, fennel seeds and marinara sauce. Sauté for about two minutes or until the mixture becomes fragrant. Season with salt and pepper to taste

Add the mozzarella and cook until the cheese is melted

Roll each of the pizza dough balls into thin, half-centimeter thick rounds. Place half the filling in the center of the dough. Fold the top of the circle over the filling. Then, take the bottom of the circle and fold it over the top. Take the left side of the circle and place that in the middle, on top of the filling and the other parts of the dough and continue to roll until the seams of the puff are now underneath. Gently pinch the puff to seal the dough

Heat about 1 inch of oil in a large sauce pan. Fry the pizza puffs until golden brown.
