Vegan Poke Bowl

Ingredients:

 

-1 cup Rice of choice, cooked

-Asian-Inspired Marinated Tofu (recipe below)

-Radishes, sliced

-Cucumber, sliced

-Carrots, sliced

-Avocado, sliced

-Edamade

-Jalapeños, sliced

-Scallions, sliced

-Spicy Mayo (2 parts Vegan Mayo, 1 part Sriracha)

-Peanuts, roughly chopped (optional)

-Black Sesame Seeds (optional)

 

Directions:

 

  1. Place the rice in an even layer in a large bowl 

  2. Arrange the tofu, edamame, and sliced vegetables on top of the rice

  3. Top with peanuts, spicy mayo, black sesame seeds, and scallions.

 

Asian-Inspired Marinated Tofu

 

Ingredients:

 

-1 package Extra Firm Tofu

-3/4 cups Reduced Sodium Soy Sauce

-1/4 cup Sesame Oil

-2 tablespoons Plum Sauce

-2 tablespoons Sweet Chili Sauce

-1 tablespoon Agave Nectar 

-1 1/2 tablespoon Ginger, minced

-1 1/2 tablespoon Garlic, minced

A tablespoons of the following spices:

-Red Chili Flakes

-Dried Thyme

-Black Pepper

 

Directions:

 

  1. Drain and pat the tofu dry. Cut it into 1 inch pieces

  2. In a medium bowl, combine the remaining ingredients and whisk well to combine

  3. Place the tofu into the marinade and rest in the fridge for 4-6 hours but overnight would be better. Be sure to gently mix the tofu every two hours.
