Vegan McGriddle

Vegan McGriddle

 

Ingredients:

 

-1/2 cup Vegan Pancake Batter

-1 cup Plant Milk

-1 teaspoon Ground Cinnamon

-1 teaspoon Vanilla Extract

-1 tablespoon Maple Syrup

-1 Vegan Breakfast Sausage Patty

-1 slice Vegan Cheddar

-2 tablespoons Just Egg or Vegan Egg Batter of choice

-Vegan Butter

The Following Seasonings to Taste:

-Black Pepper

-Seasoning Salt

-Garlic Powder

-Dried Parsley

-Non-stick Spray

Aluminum Foil

 

Directions:

 

  1. Tear an inch of foil off of the roll. Fold it in half lengthwise and then fold it in half again. Curl the foil into a circle shape with about a 2 inch diameter. Seal the foil mold with a smaller piece of scrap foil. Repeat this step making two foil molds and set aside

  2. In a small mixing bowl, add the pancake batter, cinnamon, and plant milk. Then, add the milk little by little, being sure the batter is not too thin. Add the vanilla extract and stir well to combine

  3. Heat a large skillet on medium low heat. Add the butter, being sure to coat the bottom of the pan. Add the foil molds and make sure they are flush against the bottom of the pan. Add half of the pancake batter into each of the molds and drizzle a 1/2 tablespoon of the maple syrup on top of the pancake batter in each mold. The batter will leak out of the bottom of the mold and this is okay. Use your hands to gently push the molds down against the pan as the bottom of the pancake cooks. Use a spatula to scrape away the excess from the molds when the bottom has set. Flip the pancake over when bubbles begin to form in the top of the batter. Continue to cook, turning frequently, until the pancake is cooked all the way through

  4. Spray a small ramekin with the non-stick spray. Add the Just Egg and seasonings to taste. Microwave for 1-2 minutes or until the egg is cooked all the way through

  5. Warm the vegan sausage patty and melt the vegan cheese on top. Build the McGriddle with one of the pancakes, the vegan sausage and cheese, the egg patty, and top with the remaining pancake.
