Vegan Fettuccine Florentine

 

Ingredients:

 

-1/2 block Tofu

-1 1/4 cup Oat Milk

-1/2 cup Nutritional Yeast

-4-6 cloves Garlic

-3 cups Baby Spinach

-1 cup Cremini Mushrooms, sliced

-1/2 pound Fettuccine 

-1 tablespoon Soy Sauce (optional)

The Following Seasonings to Taste:

-Black Pepper

-Salt

-Seasoning Salt

-Trader Joe’s Onion Salt

-Garlic Powder

-Non-stick Spray

 

 

Directions:

 

  1. Prepare the fettuccine until al dente, drain, and set aside

  2. In a blender, add the tofu, oat milk, nutritional yeast, garlic, salt, and black pepper. Blend until smooth and adjust to taste. Then, set it aside

  3. Spray a skillet with non-stick spray and add the mushrooms. Season the mushrooms to taste and sauté for 3-5 minutes or until they are tender. Deglaze the pan with the soy sauce and add the spinach. Sauté for about a minute or until the spinach is just welted

  4. In a large pot on medium heat, combine the fettuccine, veggies, and sauce. Simmer until the sauce thickens.
