Vegan Shrimp Scampi

 

Ingredients

 

-1/3 pound Linguine Noodles

-1 7 oz bag Verisoy Vegan Shrimp, Frozen

-1/2 cup Vegan Butter

-4 tablespoons Extra Virgin Olive Oil

-1/2 cup Dry White Wine

-3 tablespoons Garlic, minced

-1 tablespoon of the Following Seasonings:

-Black Pepper

-Garlic Powder

-Dried Thyme (you can substitute fresh parsley for this)

-Salt-Free Garlic and Herb Seasoning

-Onion Salt (I used the one from Trader Joe’s)

The Following Seasonings to taste:

-Salt

-Red Pepper Flakes

 

Directions

 

  1. Bring a medium pot of water to boil. Season water liberally. Add linguine noodles and cook until al dente

  2. Meanwhile, heat butter and olive oil in a large sauté pan. Add frozen shrimp and all seasonings. Sauté for 5-7 minutes, or until shrimp is defrosted and begins to brown

  3. Add garlic and cook for an additional 5 minutes. Continuously stir the pan so that the garlic does not burn

  4. Add the white wine. Cook for an additional 2-3 minutes or until the alcohol has evaporated, the contents of the pan has “calmed down”, and the sauce has slightly thickened

  5. Add the linguine noodles to the pan and fold to incorporate
