Vegan Pupusas

Vegan Pupusas

 

Ingredients:

 

-2 cups Masa Harina

-About 1-1 1/2 cups of water

-Salt to Taste

Fillings of choice

(I used: Vegan Beef (recipe below), Refried Beans (recipe below), and Vegan Mozzarella)

-Oil for Frying

 

Directions:

 

  1. Place the masa in the large bowl. Season with salt

  2. Add the water in intervals, mixing the dough in between each addition. You can use a spoon but your hands work much better here. Continue to mix until the dough comes together and is the consistency of play dough 

  3. To assemble the pupusa, take a 2-3 inch ball of the dough and flatten into a circle with a 1/4 inch thickness. Place small amounts of the filling ingredients in the center of the circle. Taking an equal sized and shape amount of dough, place it on top of the first circle of dough and fillings

  4. Seal the sides, concealing the fillings inside. Round the edges so the pupusa resembles a disk

  5. Fry the pupusa in a lightly oiled pan until the masa is cooked through and is golden brown

 

 

Curtido:

 

Ingredients:

 

-1/4 of a medium Head of Cabbage, thinly sliced

-1 Carrot, shredded

-1/2 medium Red Onion, sliced

-3/4 cup White Vinegar

-1 tablespoon Dried Thyme

-1 tablespoon Dried Oregano

-Salt to taste

-Boiling Water

 

Directions:

 

  1. Boil about 4-5 cups of water (a full kettle works really well here)

  2. Place the cabbage, onion, and carrots in a large bowl. Use your hands to combine

  3. Completely cover the vegetables with the boiling water. Let it sit for about ten minutes or until the vegetables are limp and translucent

  4. Drain the vegetables and add the remaining ingredients. Stir well to combine

  5. Refrigerate for at least four hours although overnight would be better

 

 

Vegan Steak

 

Ingredients:

 

-3/4 cup Vegan Beef of Choice (I used the Verisoy Taiwanese Beef Slices)

-1 tablespoon Better Than Bullion Vegetarian No Beef Base

-Garlic Powder

-Black Pepper

-Oil for Frying (about 1-2 tablespoon)

 

Directions:

 

  1. Heat the oil in a medium saucepan. Add the Better Than Bullion to the oil and cook until it bubbles (about 1 minute)

  2. Add the vegan beef and seasonings

  3. Cook until browned and crispy

 

 

Refried Beans

 

Ingredients:

 

-1 15.5 oz can pinto beans

-1 tablespoon of oil (I used canola)

The following seasonings to taste:

-Black Pepper

-Garlic Powder

Optional

-1 teaspoon “Better Than Bouillon” Vegetarian No Chicken Base

 

Directions:

 

  1. Heat oil in a small saucepan

  2. Add the entire can (including juices) of pinto beans to the oil. Heat beans until they start to simmer

  3. Using a potato masher or two forks, mash the beans until smooth (you will still have pieces of the bean “skins” remaining) 

  4. Add seasonings and the Better Than Bouillon to beans and stir to incorporate
