Vegan Southwest Salad

 

Ingredients

 

Chipotle-Lemon Dressing

 

-1/2 cup vegan sour cream

-1 tablespoon Chipotle Hot Sauce 

-1 tablespoon chopped cilantro

-1 tablespoon minced garlic

-Juice of half a lemon

-1 teaspoon of each of the following

-Cumin

-Black Pepper

-Onion Salt

 

Southwest Salad

 

-4 cups of chopped romaine lettuce

-1/2 cup black beans

-1/2 cup corn

-1/2 cup diced tomato

-1/2 medium avocado, diced

-1/4 cup red onion, sliced

-Protein of choice (I used smoked tofu and coated it in buffalo sauce)

 

Directions

 

  1. Prepare the salad dressing. In a small bowl, combine all of the ingredients. Mix well and set aside. 

  2. For the salad, place all ingredients, except protein, in a bowl with a lid. Add desired amount of dressing to the salad mixture. Seal the container with the lid and shake the container to combine. 

  3. Serve salad in a bowl and top with protein of choice.
