Vegan Haitian Fried Chicken and Diri Djon Djon

 

 

Haitian Fried Chicken

 

Ingredients:

 

-14 oz. Verisoy Vegan Chicken Drumsticks, or vegan chicken of choice

-1 1/2 cups Epis (recipe below)

-1/2 cup water

-Oil for frying

 

Directions:

 

  1. Place the vegan chicken, epis, and water in a large pot. Then bring everything to a boil and reduce the pot to a simmer. Simmer on low for 25-30 minutes

  2. Heat enough oil for frying in a large pot. Using a slotted spoon, remove the chicken from the epis and gently place them into the oil. Fry until golden brown. 

 

 

Vegan Diri Djon Djon

 

Ingredients:

 

-2 cups Dried Shitake Mushrooms

-2 cups Water

-1 cup Parboiled Rice, washed

-3/4 cup Frozen Peas

-1/4 cup Epis (recipe below)

-1 Vegan Chicken Bouillon Cube

-2 cloves Garlic

-1/2 medium Onion, sliced thick

-1 tablespoon Pure Creamed Coconut

-1 Habanero Pepper

-3-4 Thyme Sprigs 

-2 tablespoons Oil

-Salt to taste

 

Directions:

 

  1. Add the water and mushrooms into a large pot. Bring the mushrooms to a boil and then reduce to a simmer. Simmer on low for 30-45 minutes or until the water turns dark brown/black. Separate the mushrooms from the broth and set the broth aside

  2. In the same pot, heat the oil and add the onion, garlic, bouillon cube, and epis. Sauté until fragrant. Then, add the washed rice, peas, coconut, habanero pepper, and thyme. Add enough of the broth to just cover the rice. Cover, reduce the heat to low, and cook for 20-25 minutes or until the rice is soft. 

 

 

Epis

 

Ingredients:

 

-1 bunch Italian Parsley

-1 bunch Cilantro

-1 Bell Pepper 

-5 Sprigs Thyme

-3 stalks Green Onion

-1/4 Onion

-6-8 bulbs Garlic

-The Juice of 1 Lime

-2 tablespoons Better Than Bouillon No Chicken Base 

-1/4 cup Vinegar

-1/4 cup water

-1/4 cup Olive Oil

 

Directions:

 

  1. Remove the stems from the cilantro, parsley bunches, the stem and seeds from the bell pepper, and cut the ends off the green onions

  2. Place all of the ingredients in a blender and blend until relatively smooth (you still want to have a bit of texture).
