Vegan Ackee and Salt Fish

Vegan Ackee and Saltfish

Ingredients:

-2 cups canned Jackfruit, shredded
-1/4 cup Dried Nori, shredded
-1 can Ackee
-3/4 cup Onion, sliced
-1 cup Tomatoes, roughly chopped
-3 stalks Green Onion, sliced into 1 inch pieces
-1/2 Green Pepper, sliced
-2 tablespoons Oil of choice
The Following Seasonings to Taste:
-Seasoning Salt
-Black Pepper
-Garlic Powder
-Onion Powder
-Dried Thyme

Directions:

1. In a large bowl, combine the jackfruit, nori, and seasonings to taste. Stir well to combine
2. Heat the oil on medium high heat in a large skillet. Add the jackfruit mixture and sauté for about five minutes or until the jackfruit has softened. Add the vegetables and sauté for an additional 7-10 minutes or until the vegetables are softened
3. Drain and add the ackee to the pan. Sauté for five minutes being sure to work with the ackee gently. Season to taste.
