Vegan Ceviche

Vegan Ceviche

 

Ingredients:

 

-1 cup Vegan Shrimp, diced

-1/2 Avocado, diced

-1/2 medium Tomato, diced

-1/2 medium Red Onion, diced

-1/2 cup Cucumber, diced

-1/4 cup Cilantro, roughly chopped

-Juice of 2 Limes

-Juice of 1/2 a Lemon

-1 Nori Sheet (optional)

-4-6 dashes of Chipotle Hot Sauce (optional)

The Following Seasonings to Taste:

-Salt 

-Pepper

-Garlic Powder

 

 

Directions:

 

  1. Add the vegan shrimp, lime juice, and lemon juice to a medium bowl

  2. Tear the nori sheet into bite-sized pieces into the bowl. Stir to combine

  3. Add the remaining ingredients to the bowl and stir well

  4. Cover the ceviche and refrigerate for at least 4-6 hours
