Vegan Red Beans and Rice

Ingredients:

-1 cup Dried Red Beans
-2 Vegan Sausages (about 6 oz.), sliced
-3/4 cup Bell Pepper, diced
-3/4 Onion, diced
-1 medium Jalapeño, diced
-2 tablespoons Garlic, minced
-1/2 cup Vegan Bacon Bits
-2 tablespoons Better Than Bouillon No Beef Base
-1 teaspoon Liquid Smoke
-2 tablespoons Dried Thyme
-6 cups water
-3 tablespoons Olive Oil
Salt and Pepper to Taste

Directions:

Cover the beans and soak them for at least six hours but overnight would be better

In a large pot, heat the oil and brown the sausages. Remove them from the oil and then add the onions, peppers, and jalapeños. Sauté until translucent

Add the bacon bits, garlic, dried thyme, and liquid smoke. Cook for about 3 minutes or until fragrant

Stir in the Better Than Bouillon and cook for additional two minutes. Be sure to stir frequently

Drain the water off the beans and add them to the pot. Coat them in the sautéed vegetables

Add the water and turn the stove down to low. Cook until most of the water has evaporated and the beans are thick and tender (about 2-3 hours). Ten minutes before turning off the heat, add the sautéed sausages back to the beans

Serve with cooked rice.
