Vegan Breakfast Grilled Cheese

 

Ingredients:

 

-1 Vegan Sausage (I used the Beyond Meat Brat Sausage)

-2 Slices of Bread of choice

-2 Slices of Vegan Cheese

-1/4 cup Vegan Egg mix

-2 tablespoons green onion, sliced

-2 tablespoons green pepper, diced

-1 tablespoon garlic, minced

-Black Pepper, to taste

-Nonstick spray for eggs

-Vegan Butter for making the grilled cheese

 

Directions:

 

  1. Prepare the sausage: cut the sausage in half, lengthwise. Cut each sausage half in half (you should have four pieces of sausage). Season sausage with black pepper (optional)

  2. Sauté sausage pieces until crisp and brown

  3. Using nonstick spray, sauté the green peppers and onions until soft. Add vegan egg mix to the pan and scramble to desired consistency

  4. Prepare the grilled cheese: add butter to a pan on medium-low heat. Build the grilled cheese in the following order: the first slice of bread, the first slice of cheese, scrambled eggs, sausage, and final slice of cheese

  5. Spread a thin layer of vegan butter on the top slice of the bread and place it on the sandwich, buttered side up

  6. Cook sandwich until cheese has melted

 

Tip: Placing a lid over the grilled cheese as it cooks helps the vegan cheese melt faster.
