Vegan Steak Nachos

Vegan Steak Nachos

 

Ingredients:

 

-1 large bag Tortilla Chips of choice (I used Spicy Sweet Chili Doritos)

-2 cups Vegan Queso (recipe below)

-1 1/2 cup Vegan Steak, diced (recipe below)

-3/4 cup Vegan Cheddar Cheese, shredded

-1/2 cup Tomatoes, diced

-1/2 cup Onion, diced

 

Directions:

 

  1. Preheat the oven to 400º F

  2. In a medium baking dish, place a layer of the tortilla chips, being sure to completely cover the bottom of the dish

  3. Pour half of the queso evenly over the chips. Top the chips with half of the tomatoes, onions, and vegan steak

  4. Build an additional layer of chips, copying the previous steps. Top this layer with the shredded vegan cheese

  5. Cover the baking dish with aluminum foil and bake for twenty minutes or until the cheese melts.

 

 

Vegan Queso

 

Ingredients:

 

-1 1/2 cup Vegan Cheese, shredded (I used a mix of Field Roast’s “Chao” slices and 365’s “Plant-Based Cheddar”)

-1/2 cup Plant Milk, plus additional to thin the queso (I used oat)

-3/4 cup Jalapeños, diced (I used Trader Joe’s Sweet and Hot Jalapeños)

-1 can Green Chiles

-Salt and Pepper to Taste

 

Directions:

 

  1. Gently heat the milk in a small sauce pan. Add the cheese to the milk and whisk until the cheese is melted

  2. Add the jalapeños, green chiles, salt, and pepper and stir to combine. If needed, thin the queso with additional milk

 

 

Vegan Steak

 

Ingredients:

 

-3/4 cup Vegan Beef of Choice (I used the Verisoy Taiwanese Beef Slices)

-1 tablespoon Better Than Bullion Vegetarian No Beef Base

-1 teaspoon Low Sodium Soy Sauce

-3-4 tablespoons Water

-Garlic Powder

-Black Pepper

-Dried Thyme

-Oil for Frying (about 1 teaspoon)

 

Directions:

 

  1. Dice the vegan beef into bite-sized pieces. Season with pepper, garlic powder, and thyme

  2. Heat the oil in a medium saucepan. Add the vegan beef and cook until it browns

  3. Add the Better Than Bullion, soy sauce, and the water to the pan

  4. Cook until the water has evaporated and the steak is browned and crispy
