Vegan IHOP Cinnastack Pancakes
Ingredients:
-Vegan Pancake Mix of Choice (I used “Birch Benders Plant Protein” Mix
-1 teaspoon Vanilla Extract
-1 teaspoon Ground Cinnamon
-2-3 tablespoons Cinnamon-Sugar Filling (recipe below)
-1 tablespoon Cream Cheese Icing (recipe below)
Directions:

Prepare 2-3 pancakes according to your package’s instructions (or using the pancake recipe of your choice). Add the cinnamon and the vanilla to the batter and mix well

Place a thin layer (about 1 tablespoon) of the filling on the bottom pancake and stack the next pancake on top of that Continue this for the number of pancakes you are stacking

Spread a thin layer of the filling on the top pancake stack and drizzle with the icing
Cinnamon-Sugar Filling
Ingredients:
-1/4 cup Brown Sugar
-1/4 cup melted Vegan Butter
-4 tablespoons Ground Cinnamon
-1 tablespoon All-purpose Flour
Directions:

Combine sugar, butter, and cinnamon in a small bowl and stir well

Sprinkle in flour and mix well, getting rid of any potential lumps created from the flour

Chill in the fridge until ready to use
Cream Cheese Icing
Ingredients:
-1 1/2 tablespoons Vegan Cream Cheese, softened
-1 tablespoon Plant Milk of choice
-1 teaspoon Vanilla Extract
-6-8 tablespoons Powdered Sugar (or more depending on desired thickness)

Place all of the ingredients in a small bowl and whisk well to combine
