Vegan Potato Salad

Vegan Potato Salad

 

Ingredients:

 

-2 medium-sized russet potatoes

-1/2 cup vegan mayo

-The juice of 1/2 a lemon

-1 1/2 tablespoons Olive Oil

-3 sprigs of green onion, thinly sliced

-2 tablespoons fresh dill, chopped

-1 tablespoon garlic, minced

-The following seasons to taste:

-Salt

-Black Pepper

-Paprika

 

Directions:

 

  1. Bring about 2 quarts of well-salted water to a boil

  2. Peel and dice potatoes. Potatoes should be cut into approximately 1-inch pieces

  3. Place diced potatoes into boiling water. Boil until tender (do not over cook!)

  4. Drain potatoes and set aside to cool

  5. Prepare the dressing: In a small bowl, mix together the remaining ingredients

  6. Pour dressing over potatoes. Gently fold potatoes into dressing

  7. Sprinkle potato salad with paprika (optional)

  8. Potato salad is ready to serve but is also great after it is chilled
