Vegan Coconut Shrimp

Vegan Coconut Shrimp

 

Ingredients:

 

-7 oz. Vegan Shrimp

-1 cup Panko Bread Crumbs

-1 cup Unsweetened Shredded Coconut

-1 cup Tempura Mix (or 1 cup All Purpose Flour with 2 tablespoons Corn Starch)

-1 16 oz. can Coconut Milk (or 1 1/2 tablespoons Pure Coconut Cream mixed with 1 cup of Plant Milk of Choice)

-Seasonings of Choice

-Oil for Frying

 

Directions:

 

  1. Prepare the dredge by mixing the tempura mix and seasonings together in a shallow bowl. In a separate shallow bowl, mix the shredded coconut, panko bread crumbs, and seasonings of choice. Finally, in a medium bowl, combine the coconut milk and seasonings of choice

  2. Dip the vegan shrimp into the coconut milk, then into the dredge. Place the vegan shrimps back into the coconut milk and then into the bread crumbs. Be sure to coat the vegan shrimp well

  3. Heat the oil for frying on medium heat and fry the vegan shrimp until golden brown.
