Vegan Shrimp Po’boy
Ingredients
-1 6” Baguette
-5-6 pieces Fried Vegan Shrimp (recipe below)
-2-3 tablespoons Remoulade (recipe below)
-Lettuce, shredded
-Tomato, sliced
Directions:

Slice open the baguette length-wise. Spread the Remoulade generously on the inside of the bread

Place a layer of shredded lettuce on the bread followed by the tomato slices and shrimp
Fried Vegan Shrimp:
-1 package (200 g) Vegan Shrimp (I used Verisoy Vegan Shrimp)
-2 tablespoons Olive Oil
The Following Seasonings to Taste (about a tablespoon of each except for Cayenne):
-Seasoning Salt
-Black Pepper
-Garlic Powder
-Dried Thyme
-Dried Parsley
-Oregano
-Smoke Paprika
-Cayenne Pepper
-Oil for Frying
Vegan Shrimp Batter:
-1 cup All-Purpose Flour
-2 tablespoons Corn Starch
The Following Seasonings to Taste:
-Salt
-Pepper
-Dried Parsley
-Dried Thyme
-Garlic Powder
-Paprika
-1-2 cups Water
Panko Bread Crumb Breading:
-1 cup Panko Bread Crumbs
The Following Seasonings to Taste:
-Seasoning Salt
-Paprika
-Garlic Powder
Directions

In a large bowl, combine vegan shrimp, seasonings, and olive oil. Set aside

Heat oil for frying in a medium pot

Prepare the batter: combine all of the dry ingredients in a small bowl. Gradually add water until you get a thin pancake batter consistency
-
Prepare the panko bread crumb breading: combine all of the ingredients in a large bowl or on a plate
-
Dip the shrimp into the batter, making sure to shake off the excess batter. Then place the shrimp into the panko mixture and coat the shrimp well

Fry the shrimp in the oil until golden brown
Vegan Remoulade:
Remoulade
-1/4 cup Vegan Mayo
-1 tablespoon Sriracha
-2 tablespoons Prepared Horseradish
-1 teaspoon Lemon Juice
-1 tablespoon Sweet Relish
-4-6 dashes Tabasco Hot Sauce
-1 Teaspoon of Each of the Following;
-Paprika
-Black Pepper
-Garlic Powder
-Dried Parsley
-Salt
Directions

Place all of the ingredients in a small bowl and combine well. Place in the fridge to chill
