Vegan Chicken Salad

Vegan Chicken Salad
Ingredients:
-2 1/2 cups Soy Curls
-2 Vegan Chicken Bouillon Cubes
-3-4 cups Boiling Water
-1 1/4 cup Vegan Mayo
-1 cup Grapes, halved
-1/2 cup Raisins
-3-4 stalks Green Onion, thinly sliced
-2 tablespoons Olive Oil
-2 teaspoons White Sugar
1 teaspoon Each of the Following Seasonings:
-Black Pepper
-Garlic Powder
-Onion Powder
Directions:
1. Place the soy curls in a large bowl. Break a part the vegan bouillon cubes on top of the soy curls and cover with the boiling water. Mix well until the bouillon cubes dissolve, cover the bowl, and allow to sit for 2-3 hours
2. Heat the oven to 400º F. Drain the liquid from the soy curls, being sure to squeeze out the remaining liquid. Season the soy curls with the black pepper, garlic powder, and onion powder and coat in the olive oil. Stir well to combine
3. Spread the soy curls evenly on a parchment paper-lined baking sheet and bake until golden brown
4. Place the soy curls in a bowl along with the green onions, grapes, raisins, and vegan mayo. Stir well to combine.
