Vegan Oatmeal Cream Pies

Vegan Oatmeal Cream Pies


Ingredients:

-2 cups All-Purpose Flour
-1 1/2 cup Rolled Oats
-1 cup Brown Sugar
-1/2 cup White Sugar
-1 stick (8 tablespoons) Vegan Butter
-2 tablespoons Plant Milk
-2 tablespoons Vegan Egg Replacer
-1 tablespoon Vanilla Extract
-1 teaspoon Baking Powder
-1 teaspoon Baking Soda
-1/2 teaspoon Salt
-Vegan Cream Cheese Frosting (recipe below)

Directions:

1. In a large bowl, whisk together the vegan butter, brown sugar, and white sugar. Pour in the vegan egg replacer and vanilla extract and stir well to incorporate. Add in the flour, oats, baking powder, baking soda, salt, and plant milk. Stir well to combine, cover with plastic wrap, and chill for 30-45 minutes
2. Preheat the oven to 350 F
3. Take 3 tablespoons-sized scoops of the cookie dough and roll into balls. Place them on a parchment paper-lined baking sheet 2 inches apart. Gently press them into a round, cookie shape and bake them for 14-20 minutes or until lightly golden on the bottom. Allow the cookies to cool completely
4. Take two cookies and turn them over. Spread about two tablespoons of the frosting on one cookie and top with the other, creating a cookie sandwich.


Vegan Cream Cheese Frosting

Ingredients:

-1 1/4 cup Powdered Sugar, plus additional as needed
-1/2 cup Vegan Butter, room temperature
-1/2 cup Vegan Cream Cheese, room temperature
-2 tablespoons Plant Milk
-1 tablespoon Vanilla Extract

Directions:

1. Whisk together the vegan butter, cream cheese, vanilla extract, and plant milk until smooth
2. Whisk in the powdered sugar until well incorporated. Add additional powdered sugar to taste.
